so easy, so good
rinse your chicken inside and out. salt and pepper your chicken inside and out. throw it in a pan. chop up an onion, or two. put it inside and outside the chicken. throw in some garlic if you feel like it (especially good if you keep the cloves whole and spread on bread later). don't add any water. sometimes i throw in potatoes, apples, tomatoes, anything you want.
cover the chicken
cook for 5 hours (or until you see the meat falling away from the bones)
225-250°
take off cover for the last hour to crisp up your skin
this recipe is also really good for pork butt, throw a bunch of maple syrup on it and toss it in for 5 hours, mmmm...
