steak marinade - angel island

This is what we use to marinate the tri tip on Gerhard's annual Angel Island camping trip.

2 T vegetable oil
grated lemon rind from 1 lemon
2 T lemon juice
2 T soy sauce
1 quarter-sized piece fresh ginger, finely chopped
1 clove garlic, minced
1 t brown sugar

enough for 1.5 lbs of meat

Combine marinade ingredients and pour over meat (put in plastic double ziplocks if camping). Marinate at least 30 minutes before grilling (longer is better - overnight!).
